The midnight brownie is its own category. It is not dessert after dinner and it is not a treat with a coffee. It is a specific craving that arrives somewhere around eleven at night, usually when you are already in the car. Nothing else will do.
Manchester is better set up for this than most cities. It is also full of places selling something that looks right in a photo and eats like cardboard. Here is how to tell the difference.
Warm matters more than anything else
A brownie served cold from a display cabinet is a completely different product to one warmed through to order. Warm, the centre goes fudgy and the chocolate loosens. Cold, it is dense and dry and you are basically eating a chocolate flapjack.
Ask how it is served. Anywhere doing this properly will heat it when you order, not before.
Gooey is not the same as undercooked
Everyone advertises gooey. What you actually want is a brownie with a papery crust on top and a dense fudgy middle that holds together when you lift it. If it is wet enough to run off the spoon it has not been baked long enough, which is a different fault to being deliberately fudgy.
The crust is the tell. A proper brownie has that thin crackly top from the sugar. No crust usually means it was made in a tray far too deep, or that it is cake pretending to be brownie.
The toppings should not be doing all the work
Late night dessert menus have got competitive and the brownie is often buried under so much sauce, biscuit and soft serve that you cannot taste it. That is usually a sign the brownie underneath is not much good.
Order it with cream and whippy by all means. Just make sure that when you get down to the brownie itself there is something worth reaching.
What to order it with
Karak chai. Not a coffee and not a milkshake. A brownie is sweet and heavy and you want something strong and hot against it rather than more sugar. Strong tea cuts through chocolate better than anything else on a dessert menu.
If you do want something cold with it, go for a scoop of whippy directly on top so it melts into the warm brownie rather than a separate milkshake alongside.
Brownie or brookie
A brookie is a brownie with cookie dough baked into or on top of it. You get the fudge of one with the chew of the other. If you cannot decide between the two it solves the problem. It also stands up better to being loaded with toppings because the cookie layer holds its texture.
There is also the cup version, which some places call a Dubai brownie: warm brownie chunks with strawberries, kunafa and pistachio sauce, eaten with a spoon. Easier in a car than a plated slab.
The practical problem after midnight
Most of Manchester's dessert scene sits on busy streets where parking is the real obstacle. Wilmslow Road on a Saturday at midnight is not somewhere you want to be circling for a space. Once you have found one you are usually queueing.
For a midnight brownie specifically that is a lot of effort for one item. It is the reason drive-in dessert works so well for this particular craving.
How ours works
At Lahori Lane on Redgate Lane in M12 we serve brownie slabs until 2:00am, seven nights a week. From 6:00pm Monday to Friday and 4:00pm at the weekend.
The slabs come warm with whipped cream and Mr Whippy, in Kinder Bueno, cookies and cream, kunafa, strawberry and Nutella or the Brookie. There is a Dubai brownie in the dessert cups and brownie in the LL Crunch range layered with feuilletine and Belgian chocolate sauce. They are loaded when you order rather than sat waiting.
You do not get out of the car for any of it. Pull in, an attendant shows you where to park, put your hazard lights on and a server comes over to take the order and payment. It comes out to you when it is ready.
Longsight, Gorton, Ardwick and Openshaw are five minutes away. Levenshulme, Rusholme and the city centre are about ten. Junction 24 or 25 of the M60 brings you straight in.
